I don't know about you but I cannot believe it is July 1st already. Do you remember when you were a kid and time just seemed to go on forever? It seemed like you would never be a teenager, let alone an adult, it was going to take soooo long! Now, in my early 40's I am amazed at how years go by in what seems like a blink. Each time I notice how quickly time is passing by I get caught up in what I could be doing, what I should be doing, what I haven't yet done and is there even time for that....

So, it's July and that means it's time for another round of The Ultimate Blog Challenge, or UBC, as we UBCers affectionately call it. The Ultimate Blog Challenge is a quarterly challenge that encourages participants to write 31 blogs in 31 days (or 30 blogs in 30 days, depending on the month). If you sign up you'll receive daily email prompts so you'll never get hung up on what to write about. You can write about your business, about something personal, it doesn't matter! You then share the blog on your website, wherever you typically share your blog, and within the UBC Facebook group. Other participants read your blog and leave comments, you get traffic to your website and traction on your blog (you do the same by reading and commenting on their blogs). Very often, I write about what comes to me each day of the challenge so there isn't really a theme during the month. I'm going to try something different this month and will focus the next 30 blogs on food and I'm hoping you can help me out. JP and I have been eating A LOT of take out and I'd like to get away from that and make eating food made at home the standard. In fact, I'd like to avoid take out completely this month. I'm open to eating out if we're out and about, the occasional vegan ice cream trip, and let's be real, it's Summer in New Jersey, there's a chance I'm going down the shore at some point! We're very lucky that in New Jersey the vegan offerings continue to grow through all-vegan restaurants and traditional restaurants who understand the need for vegan options so there is no shortage of take out and dine in options.
So, here's my plan. I will write a blog about what I ate, preparations, how I'm feeling, what worked, didn't work, there will be pictures and maybe some videos. I'll share links to resources I am using, and, if I make recipes from any cookbooks authored by podcast guests, I'll link to you their episode as well. I'll also sometimes link you back to a previous blog which may include helpful tips or the recipe I'm using.
Where I would love your help is in the interaction, ask questions in the comments, leave me your favorite vegan recipes, words of encouragement, and your own stories. The pull of take out is really strong for me right now so I welcome all of the help I can get!
