Quick tofu recipe from one of my favorites

I go through phases of watching vegan chefs on YouTube and my absolute favorite chef to watch is Derek Sarno. His food and videos are beautiful, the recipes are delicious, and most importantly, he is so kind. His soft voice, love for vegan food and his dog Frankie, make every video one worth watching.


I thought I would share his 5 minute tofu sandwich video. I know for me, I will never have this sandwich made in 5 minutes (unless I made it yesterday and am simply pilling it on a roll as leftovers today, of course) so don't get discouraged if it takes you more than 5 minutes too.

In the 70s, our friends at Sunbow farm would drop off a 5 gallon bucket of their OG tofu weekly, and we'd bring it to the food co-op in my hubby's hometown, getting a block or two for home use.

Our most frequent "impoverished student' standby (~4 night's a week) was rice n lentils, often cooked with a jar of home canned veggies from his mom's organic garden - we planted and they harvested/ preserved!

50 years later, the good folks at Sunbow are still farming the land (new owners).


In those days, I'd often dredge the slices in wheat germ (we didn't yet know of our gluten sensitivity/ non gut Celiac) ...

Now I usually sauté it in coconut…
